Strawberry Shortcake Cake Roll INGREDIENTS FOR THE CAKE: 3 large eggs 3/4 cup granulated sugar 1 tablespoon vegetable oil 1 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon vanilla extract 3/4 cup all purpose flour Powdered sugar to aid in rolling FOR THE FILLING AND TOPPING: 8 ounces Challenge cream cheese softened 1/2 cup granulated sugar 1 teaspoon vanilla 2 cups cold heavy whipping cream 1 pound fresh strawberries plus more for topping, if desired INSTRUCTIONS Preheat oven to 350°F. Line a 10x15” or 10.5x15” cake/jelly roll pan with foil and spray with floured nonstick cooking spray. Place eggs in a large bowl or the bowl of an electric mixer. Beat at medium speed with mixer for 5 minutes until foamy and yellow. Add sugar and mix for 2 more minutes, until the mixture is thickened slightly. Mix in oil, baking powder, salt, and vanilla, then add flour and mix slowly until just combined. Pour into prepared pan, spreading as needed

BUTTERMILK CAKE WITH CHOCOLATE FROSTING Ingredients : 2 1/2 cups sugar 1 cup shortening 6 eggs 1 tablespoon vanilla extract 3 cups all-purpose flour 1/2 teaspoon salt 1/4 teaspoon baking soda 1 cup buttermilk Chocolate Frosting Ingredients : 1 stick or 1/2 cup butter or margarine softened 3 cups powdered sugar 1 teaspoon vanilla extract 5 to 6 tablespoons milk 1/2 cup cocoa I use Nestles 100% pure cocoa ⏩ Instructions : Cake Instructions: Beat sugar, shortening, vanilla and eggs together with spoon or mixer. Mix flour, salt and baking soda with a wire whisk and add to creamed mixture. Add milk and continue mixing until smooth. Divide between 3 sprayed cake pans and bake in preheated 325 degree oven for 30 to 35 minutes until centers test done. Let cool and remove from pans. You can frost with any frosting you like. I use chocolate frosting. Chocolate Frosting Instructions: Mix all ingredients with mixer until spreading consistency. Spread on cake.

Old Fashioned Cream Cheese Pound Cake Recipe Ingredients 1 cup butter (softened) 1/2 cup shortening 3 cups sugar 8 oz. cream cheese (softened) 3 cups all-purpose flour 6 eggs 1 tablespoon vanilla ⏩ Instructions Preheat oven to 325-degrees. Cream the butter and shortening together. Add the sugar and continue to cream. Add the cream cheese and beat until light and fluffy. Alternate adding the flour and eggs and mix until completely blended. Add the vanilla and mix. Pour into a greased bundt pan. Bake for 1 hour and 15 minutes or until cake tester comes out clean.
